Favorite Recipes: Meatloaf Muffins
Ingredients:
- 1 medium onion, diced (about 1 cup)
- 1 1/2 lbs. Ground turkey meat
- 1 T olive oil
- ½ tsp. tomato paste
- ¼ c. ketchup
- ¼ c. Chicken stock
- Dash Worchester Sauce
- Salt and pepper
- 1 c. bread crumbs
- 1 Egg
- Vegetable oil
Tools:
- Muffin tin
- Measuring cup
- Measuring spoon
- Bowls
Directions:
- Preheat oven to 450 degrees
- Grease 6 muffin tins with vegetable oil.
- In a medium saucepan cook the onions, olive oil, salt and pepper over a medium heat.
- Add the Worchester sauce, chicken stock and tomato paste. Mix well. Allow to cool.
- In a large bowl combine the turkey meat, bread crumbs, egg and onion mixture.
- Fill the muffin tin with the meatloaf mixture and spread Ketchup on the top of each muffin.
- Bake for 15 minutes or until the internal temperature reaches 160 degrees.
