Favorite Recipes: Crackerjacks


Ingredients:

  • 1 c butter
  • ½ c corn syrup
  • ½ t baking soda
  • 20 c popped popcorn
  • 2 c brown sugar
  • 1 t salt
  • 1 t vanilla
  • 1 c peanuts, optional

Tools:
  • 2 baking sheets
  • Medium sauce pan
  • Very large bowl

Directions:
  1. Preheat oven to 250 degrees.
  2. In sauce pan over medium heat, melt the butter.
  3. Stir in brown sugar, corn syrup and salt. Bring to a boil. Boil without stirring for 4 minutes.
  4. Remove from heat and stir in baking soda and vanilla.
  5. Add peanuts if using to popcorn in very large bowl.
  6. Add the hot mixture in a thin stream to the popcorn, stirring to coat.
  7. Place onto baking sheets and bake for 1 hour, stirring every 15 minutes.
  8. Cool completely before breaking into pieces.
