Favorite Recipes: Crackerjacks
Ingredients:
- 1 c butter
- ½ c corn syrup
- ½ t baking soda
- 20 c popped popcorn
- 2 c brown sugar
- 1 t salt
- 1 t vanilla
- 1 c peanuts, optional
Tools:
- 2 baking sheets
- Medium sauce pan
- Very large bowl
Directions:
- Preheat oven to 250 degrees.
- In sauce pan over medium heat, melt the butter.
- Stir in brown sugar, corn syrup and salt. Bring to a boil. Boil without stirring for 4 minutes.
- Remove from heat and stir in baking soda and vanilla.
- Add peanuts if using to popcorn in very large bowl.
- Add the hot mixture in a thin stream to the popcorn, stirring to coat.
- Place onto baking sheets and bake for 1 hour, stirring every 15 minutes.
- Cool completely before breaking into pieces.
