Meatloaf muffins Ingredients 1 medium onion, diced (about 1 cup) 1 1/2 lbs. Ground turkey meat 1 T olive oil ½ tsp. tomato paste ¼ c. ketchup ¼ c. Chicken stock Dash Worchester Sauce Salt and pepper 1 c. bread crumbs 1 Egg Vegetable oil Tools Muffin tin, measuring cup, measuring spoon, bowls 1. Preheat oven to 450 degrees. 2. Grease 6 muffin tins with vegetable oil. 3. In a medium saucepan cook the onions, olive oil, salt and pepper over a medium heat. 4. Add the Worchester sauce, chicken stock and tomato paste. Mix well. Allow to cool. 5. In a large bowl combine the turkey meat, bread crumbs, egg and onion mixture. 6. Fill the muffin tin with the meatloaf mixture and spread Ketchup on the top of each muffin. 7. Bake for 15 minutes or until the internal temperature reaches 160 degrees. *Makes 6 servings*
